Creamed Corn (a la Lawry's)

Lawry's Creamed Corn
5 pounds - Frozen Corn
1/4 gallon - Half and Half
1/4 gallon - Heavy (Whipping) Cream
3/4 cup - Sugar

1/4 teaspoon - White Pepper
3 Tablespoons - Lawry's Seasoning Salt

Roux:
3 Tablespoons - Butter
3 Tablespoons - Flour

BOIL in a LARGE POT
1/4g Half and Half
1/4g Whipping Cream
3/4c Sugar

ADD
5lbs Frozen Corn

ADD
1/4t White Pepper
2-3T Lawry's Seasoning Salt

Bring to a BOIL again

In a separate SMALL pan

MELT
3T Butter

SLOWLY ADD
3T Flour
1T at a time and mix gently has worked well

Allow the roux to thicken and darken in color. Be careful not to burn it.

Once the corn has come to a boil

ADD the roux and MIX WELL

Allow the mixture to THICKEN
STIR OFTEN

Been a while (again). Today is Cait's first day of school for this school year but don't tell that to her. She already took summer school for her Korean so this is NOT really her first day to her.

As you might (or might not) already know...The twins are in PreSchool 5 days a week now and they are loving it. Here they are on thier first day back on July 18th, 2011...

As soon as I found out that I was having twins i started looking up support groups for others that were expecting twins. What I found was an entire community. Not only comprised of those that were expecting but also who had had their twins already.

I began attending meeting for my "Mom Group" in October or November of 2008. The first meeting was a Round Table Discussion. The location that we meet at is perfect for this as it is a bunch of table that are split into age groups. The first being pregnant to 12 months, then 13 months to 2 years and so on. This is where I met my first connection to another MOM (Mother of Multiples), Aimee. Her twins were born at 28 weeks gestation and were in the NICU for quite a while. They were born on Cait's birthday in 2007. There wasn't a meeting in December but they have a Breakfast with Santa every year and although I was heavily pregnant, I still took Cait after her skating class. When I had the twins the next month, Aimee was beyond generous and came to visit while I was in the hospital. She gave us the car seats that her kids had used since they were now too big for them. That right there was the best gift.

I have continued to stay current with the other MOMs and I am now the Chair for Ways and Means 2010-2011. I keep up to date with the National Organization through their magazine called THE NOTEBOOK and through facebook. It was first brought to my attention in the magazine about a convention that they have every year. This year it was in Toledo. Next year is Chicago and 2010 is in Charlotte. I was hoping to be able to make it to Charlotte in 2012 but now that we have family in Chicago, I am aiming for 2011. Maybe even bring the kids and they can visit family as well, making it an extended vacation instead of just the week is a possibility in my mind as well. Funds are what will make or break it.

I hope to be able to make more friendships with other MOMs and connections that will last throughout the years. Being able to connect to others that share the same challenges of raising multiples is priceless.

First Day of Kindergarten

Today was Caity's first day of Kindergarten. The school year officially starts on August 30th but since she is going to be taking the Korean FLAG Program, they have a 3 week Summer School from July 12th to July 30th from 8am to 12pm.

This morning started out VERY well! She got up at 645am when it was time to get up and go potty, eat breakfast and get dressed. I wasn't sure how long it would take for us to get ready with everyone getting up so early but we had 20 minutes to spare so we (the kids) might get to sleep until 7am tomorrow.

We got to school and she even got to be the first in line.

We found out that her teachers are going to be Ms. Youn and Ms. Park.

Her HomeRoom is Youn. I am assuming that it is the Korean teacher because she said she couldn't understand very much today but she still had fun.

We made it to about 930 at school when Mommy got a call from Ms. Wong in the office because Cait went with a buddy to the bathroom and consequently got her finger caught in the door jam. Ms. Wong kept describing it as SQUISHED. She sent me a picture and I rushed out of my class to go get her and we went to the Emergency Room at Glendale Adventist. I was told that she didn't cry very much about it and was a very brave big girl. They had put ice on it to control the swelling and that helped.

This is what it looked like when I picked her up. The dent was gone and it had swelled up from being banged around and squished for so long.

She had fun at the hospital. She got to be in her own room and not just divided by a curtain. The security, triage nurse and Doctor all loved her! She was Little Miss Chatterbox the entire time. Very interested in everything that was going on. They took her temp, then her weight and pulse. Security gave her a Sponge Bob sticker and she loves it. He even came back and asked how the Princess was doing.

We got x-rays done, Mommy had to stay outside. It is not broken thankfully but we are still going to keep a splint on it for the next few days just to keep it straight.

Kindergarten: Here We Come

On Friday we enrolled in Kindergarten. Today we enrolled in the in the DUAL Language program at Keppel. Not only will Caity be learning kinder in English but for that other half of the day she will be
taught in Korean. She will be in school 5 days a week from 8am to 205pm except for Thursdays when they are dismissed an hour early.

PROGRAM MODEL:
50/50 Two Way Dual Immersion Model
50% of intruction in English
50% of instruction in Korean
Switch order every month

KOREAN DUAL LANGUAGE PROGRAM (KDLP):
Goal 1: Bilingual and Bi-literate
-Fluency in Rwo Languages in areas of Listening, Speaking, Reading, Writing and Academic Language
Goal 2: Succeed Academically
Goal 3: Develop appreciation of and respect for other cultures

IN DUAL LANGUAGE PROGRAM:
-All subjects are taught in both languages
-No repetition on lessons
-No translation but language support by peers
-Skills and knowledge learned in one language transfer to the other
-Native language proficiency is a powerful indicator of the rate at which Language 2 is acquired

KEY RESEARCH FINDINGS:
When compared to their peers in Mainstream Programs dual language students:
-Scored as high or higher in English reading and mathematics
-Earned higher SAT scores particularly in the verbal section of the test
-By the 5th year in a DLP, students outperformed all comparison groups and remained high throughout their schooling

Parent-Teacher Meeting

First meeting with the teacher today. Cait is right where she should be. we just have to work on recognizing what the letters and numbers actually look like and not just knowing them in order, Why is a triangle called a triangle, what makes a square different from a rectangle, etc. And cutting! Cutting better will help with her writing skills.

Today was HAPPY HARVEST DAY at PreSchool. All the kids helped cut and prepare the vegetables for the soup and had a blast doing so. Then the parents came about 1/2 way through the school day and we all had fun together.

Babies P.O.V.: Every Sunday we go with Daddy, NaNa and PaPa and go to Souplantation. We love it there. We get to sit in high chairs like big kids and even get to try new foods. Today we got to try EGGIES and Daddy gave us some of his TAPIOCA PUDDING. Yummy!

On Friday, we decided to just go to the Topanga Mall and walk around. Nothing in mind, just walking and spending time together. We got popcorn from Popcornopolis, went to The Children's Place and got some great little Halloween shirts for $3.00 each, and even went on the Merry-Go-Round. But, the highlight of the night was when we went to go on the little quarter rides that they have and a man from Photo Perfections came out and asked if we wanted to get their pictures taken. No catches. Just come in and take their pictures just as they are. We decided to do it and I am glad that we did. I couldn't do their "fantasy" shot because those were not included in the free 8x10 but oh well. We wanted a simple Halloween picture so we put those cute shirts on that we got them and they turned out GREAT! See for yourself...

We went with the black background and left their shirts in color and the twins' blue eyes in color. We even left Matthew's drool; that's just who he is.

Thanks to all for the birthday wishes. Yesterday was a good day. Made even better by the arrival of Krista's son Ethan Patrick. He was born at 1:22pm and weighed 7lb 3oz and was 21in long. Lucky witch even gets to take him home today...lol.
